Ingredients
¼ cup Huffman’s Hot Sauce
1 Âľ cup White vinegar
400g Sugar
1 Bunch mint
2 Cucumbers – seeded and sliced into 2mm thickness
1 Red onion – sliced into rings 2 mm thick
Directions
Place Huffman’s Hot Sauce , white vinegar and sugar into a pot over low heat.
Warm gently until sugar has dissolved.
Pour into a bowl and place in the fridge and cool completely.
Place mint into a blender and add half of the cooled mixture.
Blend until mint is very finely chopped.
Pour into remainder of the cooled vinegar mix and stir.
Strain and press hard on mint to extract all juice.
Pour over sliced cucumber and onion.
Chill until ready to use.
